Nick’s Sticks

I love my beef, be it beef sticks or beef jerky. I am always on the look for a more healthier type of snack and one that doesn’t have all that processed meat, fake meat, or chemicals in them. That’s where Wallace Farms who produces Nick’s Sticks comes in!

Nick Wallace is one of the founders of Wallace Farms, a 100% grass-fed cattle farm located in Keystone, Iowa. He grew up in a town called Strawberry Point… charming, right? Ventured far west for college, landing in Corvallis, Oregon…. Duuude! Got sick (see above) and finished school and chemo in Iowa City, IA…. Whoa! Then had a come-to-Jesus career moment that led to a year of culinary school in Colorado…. Free food + lift tickets = Gnarly! Finally, he returned “Back to the Land” that his great-great grandfather first farmed in 1894. Alleluia! 
         
Today, other farmers simply watch in amazement as Nick stacks and packs the snacks that will keep you coming back! Try to say that 5 times fast!
Some farmers are turned on by confinement livestock, GMO feed and MSG. Nick and his cattle thrive on grass, sunshine and free-range living. Along the way, he developed the idea and the recipe for Nick’s Sticks. They are a straightforward, uncomplicated food that nourishes your body and soul.

  • No MSG
  • No Antibiotics
  • No Hormones
  • No Fillers
  • No Red Dye #3 in our casings (nearly all traditional sticks use Red #3 — yuck!).          

Grass-fed beef kicks corn-fed cows… in the COB!

  • Low saturated fat — like snacking on chicken or fish
  • High levels of “good fat” omega-3’s — hey, if you’re gonna eat fat… make it the good stuff!
  • High doses of conjugated linoleic acid (CLA) — really hard to say and spell, but it kicks cancer where the sun don’t shine
  • 100% free-range bliss — our cows enjoy “outdoor recess” all day… everyday!
  • Eco-friendly? — Sure, our cows produce a bit of natural methane… but our tractors stay in the barn!

I would have taken pictures of the turkey and beef sticks that Nick sent me to review but they did not even last. Everyone in my family grabbed and ran off with them! But let me tell you, these are REALLY the best beef sticks I have EVER tasted!
